S’more have become so popular that America has honored this treat with its very own special day. Did you know that? August 10th is National S’mores Day!

Yum! S’mores is a big hit with my children and their friends anytime of the year. So I have taken to preparing s’mores in batches with less mess and hassle!! A tray of  s’mores baked in the oven is ready in 5 minutes for all guests to enjoy together!

Method:  Bake one half of the graham cracker with a marshmallow for 4-5 minutes on 350 F  degrees.  Meanwhile line up the other half of graham crackers along with chocolate squares on the serving tray.  I never place chocolate in the oven since it will becomes too gooey and will melt once topped with the toasted marshmallow half!

A tray s’mores passed around at a backyard BBQ doesn’t last long. Occasionally I get a little creative using chocolate graham cracker on one half and honey on the other!

These brownies rock! Moist heavenly chocolate with a hint of banana! How can you go wrong?

Chocolate Banana Brownies

½ cup butter

½ cup unsweetened cocoa powder

2 eggs

1 cup all-purpose flour

1 cup sugar

1 cup of milk

1 Medium Banana

1 tsp vanilla extract

1 tsp backing powder

¾ cups all-purpose flour

Melt butter and stir in cocoa powder over low heat until smooth and remove from heat. In mixing bowl, mash banana, stir in eggs, sugar, vanilla and beaten lightly.  Add melted buttery chocolate to mixing bowl along with increments of flour and milk while beating together. Grease 9X13 baking pan. Bake 350 degrees for 25-30 minutes.  Use a toothpick to check readiness.

Psst…I have a confession!  Baking is not really my thing!  To save time, I enhance store bought mixes when time is tight. This Orange Supreme Cake got stuck in the pan because I was rushing to prepare a dinner party.  So it became an Orange-Berry Trifle.

Orange supreme cake mix made according to box instructions, but enhanced with the following. Add 1 smashed banana, 1/3 cup of applesauce and 1 teaspoon orange extract.

Tip Idea:  Melt a bar of 60% dark chocolate in small double boiler.  Stir in a little halfhalf, milk or cream so it will not harden again when cooled.  Drizzle chocolate over top!

Notes: Next time I’ll use more shortening grease and dust the pan properly with flour and sugar!
